Ingredients

    1 cup flour
    1 c oats(old fashioned)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup unsweetened applesauce
    2 egg whites
    1/2 cup sugar
    1/2 cup water
    1 c blueberries, frozen

Directions

Spray a 12 cup muffin tin and preheat oven to 350. Mix flour, oats, soda, cinnamon and salt together. Add applesauce, sugar egg whites and water, mix until just blended. Add in blueberries. Bake at 350 for 20-25 minutes or until tops have lightly browned.

    My kids devoured this muffins in a matter of hours! I substitued blueberry applesauce and it only enhance the deliciousness in each bite. I also added a 1/4 cup of ground flaxseed to enhance the fibre content. Happy Baking! - 3/3/11

    Used 1 whole egg and 1.5 C. blueberries - more dense, but still delicious! Directions had two temps listed, I chose 400 degrees for 20 min. Thanks for great sweet tooth satisfaction! - 1/31/14

    Have made this recipe twice and loved it. This time I replaced the cinnamon with orange zest, the water with the juiced orange left after zesting and the blueberries with dried dates. Delish. - 10/27/13

    Loved these!! Some changes I made: I didn't have applesauce, so I substituted 1tbps coconut oil, and 1/3 of a banana, mashed. I used brown sugar instead of regular, and only used 1/4 cup. Almond milk in place of the water. And one whole egg instead of the whites. 106 calories. - 7/27/14

    I used whole wheat flour, added vanilla extract, and didn't have applesauce so I mashed up a few very ripe bananas and used those instead! Oh, and I used milk instead of water! - 7/1/12

    Just put them in the oven. I used about an extra 1/8 cup sugar and the batter tastes very sweet. If they turn out yummy, we're making a batch for the neighbors and company. Love the oats and applesauce!
    Okay. They are super delicious and plenty sweet. Second batch has only 1/2 c. sugar.

    This was a good recipe and I will make it again, but it could likely be tweaked into something great. It was a little dense and stuck to the cupcake papers. I might try to get it a little fluffier next time. But there will be a next time - it's worth making again. - 10/11/12

    Loved this recipe! Brought it to my book club meeting and it was a hit! I used whole wheat graham flour to add more fiber. I also doubled the blueberries and substituted Splenda for the sugar. I'll Make this one again--maybe try with frozen strawberries next time. - 5/15/10

    These blueberry muffins were really good and easy to make! This is the 2nd time I've made these. I
    like these just the way they are. I used egg beaters instead of egg whites, which is the same thing. I may try a banana or raspberries the next time. Have a Thankful & Blessed Thursday!

    Very good, but the calorie count is off. It was based on the oats having been cooked with water, which this doesn't call for. 1 cup cooked is 145 calories, but 1 cup not cooked is 607, which is 38 extra calories per muffin. It is also based on whole wheat flour, which this doesn't call for. - 7/21/15

    I didn't have white flour so I used light whole wheat, and it was still tasty. I also used one egg instead of egg whites. My teen loved these, and I was happy to have a "sweet" snack that was low cal . (I believe preheat temp should be 400) - 11/25/13

    Why is it when you go in to modify the recipe, the ingredients and measurements are different? Whole wheat flour? I subbed the egg whites with 1/2 cup egg substitute. I was surprised to see less sugar, salt, and the whole wheat flour listed as the calculated ingredients. - 9/7/15

    These are very good for a muffin. Not muffin like as much as I thought but still a nice way to start my day. I did use 1 egg instead of egg whites. I froze them for later as they were moist. I reheat in the air fryer for about 5 min and they are very good. - 7/25/20
