Number of Servings: 64

Ingredients

    6 cups rolled oats
    2 cups wheat germ
    1 cup coconut, medium shred, unsweetened
    1/2 cup ground flax seed
    2 cups chocolate chips (raisins or other dried fruits are also good - and healthier!)

    2 cups butter
    2 cups brown sugar, packed
    2 tsp. vanilla extract


Directions

Put chocolate chips in freezer (this step is important, or the chips will melt when the butter mixture is added).

Melt butter and brown sugar over low heat. Stir with whisk until well combined. Add vanilla. Set aside to cool to room temperature.

In large bowl mix oats, wheat germ, coconut, flax seed, and chocolate chips. Stir in cooled butter mixture.

Spread in 11"X17" jelly roll pan. Bake at 350 degrees for 16 - 18 minutes. Cool to room temperature.

Cut into 64 bars. Leave on pan and refrigerate. Re-cut once bars are cold. Store in air-tight container in fridge or freezer.

    This is a good recipe, but if you are trying to eat healthier, there are great recipes with less sugar & fat (with some honey and apple sauce and the like). I can see making these to have as a rare cookie- sounds delicious! - 11/5/11

    i sub brown sugar for splenda brown sugar and omitted the choc chips for more dried fuit. yymm - 3/29/09
