Number of Servings: 6

Ingredients

    1 lb small red potatoes
    2 Tbsp olive oil
    1/4 c red wine vinegar
    2 tsp Dijon mustard
    1/4 tsp salt (sea salt is best)
    1/8 tsp freshly ground pepper
    1/2 tsp dried herb (tarragon, rosemary or another favorite)
    1/4 c minced fresh parsley
    1/4-1/2 c minced red onion (optional)

Directions

1. Scrub and quarter potatoes. Steam just until tender, about 15 min.
2. Whisk together the rest of the ingredients to make dressing.
3. When potatoes are slightly cooled, slice and toss gently with dressing. Serve at room temp.

    This was a HUGE hit at my barbecue. I never make these things instead relying on store bought for the ease. Yet it was really quite easy. Use the little red potatoes. It makes it much easier for there is no peeling involved. - 8/19/12

    This was great! I did reduce the vinegar as one of the other reviewers had mentioned. When I make a vinaigrette I usually have the same amount of vinegar or lemon juice as the oil. Matter of taste I guess. - 6/5/11

    I loved this recipe. It's easy to make and keeps well for several days. As someone else said, it's great for picnics and bbqs because it's not mayo-based. Also much lighter than mayo recipes. Next time I make it I'm going to try grilling the potatoes to add an extra punch to it. - 7/2/10

    I nearly follow this recipe to the 'T'. Rather than straight dijon, I use a Grey Poupon's Mild & Creamy since that is always what I have on hand. I absolutely love this and can't wait to share it with others. - 3/30/10

    I still like my old fashioned Potato salad with Mayo as I do not like mustard. I also put lots of different veggies in it too, it has lots of color and you can always mash a few potatoes to add to the mayo the make it a thicker dressing. Just my opinion, not a mustard person. - 3/20/10

    This recipe is fantastic! Very low calorie and no mayonnaise. Great for a summer picnic !! There's a little too much red wine, for my personal liking, so I simply reduced the amount. I put it in the oven after mixing all the ingredients, then added the parsley, which made it tastier. YUM! - 8/27/09
