Ingredients

    About 2 tsp tarragon
    About 2 tsp rosemary
    About 2 tsp garlic powder
    1 lb. Chicken breast (tenders work best)
    About 2 Tbsp Mascarpone cheese
    3-4 thin slices turkey bacon
    1/4 c. part-skim mozzarella cheese

Directions

Take 1 pound chicken breast tenders; pound each tender flat using a mallet. On each flattened tender, put 1/3 a slice of turkey bacon. Thinly spread mascarpone cheese as you would butter; sprinkle tarragon, garlic powder, and rosemary. Roll each tender. Sprinkle top of each roll with mozzarella cheese. Bake for 20-25 minutes at 375 degrees.

Serves 4 (roughly 2-3 rolls, depending on size).

    all i can say is mmmmmmmmmm...question do i eat all 4 servings...wink..seriously though how many rolls can i consume without cheating my plan? - 6/10/09

    We had this problem too--Considering that 1 serving of chicken is 3 oz, I think what we figured was safe was 2-3 rolls depending on size (since we made them with tenderloins, the size of the chicken determined it, which was roughly 1 oz per tenderloin).

    These were good but I think next time I make them I'll try with a lean deli ham instead of the turkey bacon. Normally I like turkey bacon ok, but it seemed to give the chicken a bit of a "fake" taste. Loved the concept, though & the combo of seasonings & mascarpone. - 6/30/09
