Introduction

Ingredients

    1 chicken breast
    1/2 cup salsa
    1 jalapeno pepper, sliced (optional)
    6 small black olives (optional)

Directions

Cut a piece of foil large enough to close around the chicken breast.
Place the chicken breast onto the foil and pour salsa over top of the breast.
Place peppers and olives on top.
Wrap the foil around the chicken and fold the ends together tightly and place in an oven dish.
Bake at 400 degrees for 45 minutes.

    Great easy way to make chicken, although I did it even more basic. I just put the chicken (3 breasts) in a glass baking dish coated with spray, and covered with the salsa. Topped dish with tin foil. Baked to the right temp inside and then topped with a little mozzarella. Will definitely make again. - 11/1/08

    This came out great! I put them on a bed of spinach leaves, as someone suggested, put a little pepper & garlic powder on each breast, then topped them with black beans, salsa, olives and red bell pepper slices (I was out of jalepenos). In the oven for an hour at 400 degrees per recipe & was perfect - 12/21/09

    This was sooooooooooooo good! I hsd a recipe that was similar from PC, but I loved the meal in the foil. I added summer and zucchini squash onions, and black olives. Omitted the jalepaneo peppers adn aded 2 T. of Mzzarella cheese. My husbnd voted 2 thumbs up for having it again. - 6/22/10

    I loved this recipe accidently made with picate sauce instead of salsa used 4 breast instead of 1 freeze the rest very spicy but i loved it will make it again - 5/7/08

    Nix the foil, used a pyrex with a lid. Left out the olives and peppers. The chicken was tender and tasty, baked at 350 for 40 min. I'll try cheeze on it next time! Yum. - 4/5/08

    This was great! I used a 1lbs pack with 3 breasts, filled them with a little Monterey Jack with Jalapenos, topped each with Salsa and a dash of Mexican Cheese and off into the oven.
    The chicken was super moist and tasty. I served it with brown rice that I had fried with onions and bell pepper.

    Tasty, but a couple of observations: foil should not be used with acidic foods like salsa, it is reactive and can actually be dissolved by the acid; this recipe should call for 1/2 a chicken breast, as a whole one would be all the breast meat from one chicken; one hour is too long, 30-45 min is good - 1/13/08

    I've made this for years. I do it in the crock pot. There are dozens of variations you can make: onions, shredded cheese, tortillia chips, guacamole, sour cream (low fat), cilantro, etc.
    And it always works and it always seems like you really did a lot more!

    I make this all the time. However, I cut down on the cook time in the oven and leave off the peppers. I also will use the same techinque with spaghetti sauce and cheese for baked chicken parm. - 4/10/08

    We like spicy so added chipolte pepper and garlic & put on a bed of spinach with homemade spicy chunky salsa (onions, toms, cilantro, asst. bell peppers). Added black beans & corn. Topped with grated cheese, lo-fat sour cream & guacamole. Served with WW tortillas. 1 hr at 400 was perfect. Thanks! - 4/14/10

    so so good! i used 3 skinless tenderloins since that what I had at home. Covered them in salsa and mexicorn, put them in the pouches and baked on 375 for about 40 minutes. The chicken was fall apart juicy!! Thank you so much for this easy and delicious recipe!! - 4/8/10

    sounds good temp to high for me 350 1 hr put salsa on last 20 min so it doesnt dry out ive added root veg like potato carrot tomato for a complete cubed potato really works well - 9/5/09

    I cut out the olives and peppers because I didn't have them on hand, but I added a little bit of shredded cheddar. I put it over rice and in a whole wheat taco shell. It was AWESOME!! I can't wait to try this again. - 4/12/08

    Whoa! Talk about spicy. I love spicy foods but I must have used too many peppers and I didnt gut them so I thought it was extremely spicy. The chicken was super moist and had a great taste. I will try it again just cut it down to one devained pepper. - 6/2/07

    Sooo easy to make! I omitted the peppers and black olives (the kids ate the last can I had) but instead used mild salsa and a green olive tapenade. Also in the pouch were 10 sliced baby carrots. Served over brown rice - VERY yummy! - 3/26/07

    The 60 min is if the breast(s) are frozen, less if thawed.

    This was delicious! I cut up the chicken breasts into chunks so they cooked a little faster. We added a little shredded extra sharp cheddar cheese and shredded mozzarella and cleaned their plates! I can see many additions to this: fat-free sour cream, lettuce, zucchini, etc. A new favorite dish! - 3/22/10

    My favorite meal is similar to this--mix 1 small jar salsa and 1 package taco seasoning. Place chicken breasts (frozen or thawed) in the crock pot and pour the mixture over them. Cook for 4 hours or until the chicken is done. Shred the chicken and serve as tacos if you like. Yummy and easy! - 3/21/11

    I will try this, but the cooking time just can't be right! I roast an entire chicken in 60 minutes, but not a small breast. I'm guessing 400 degrees for 15-18 minutes, or 375 for 20 -25 minutes. I'll post again after I try this! - 4/10/08

    I think that if you baked one little piece of chicken at 400 degrees for 60 minutes it would taste like rubber. Wouldn't 25 minutes at 350 degrees be morappropriate> - 4/9/08
