Ingredients

    4 eggs (use five if eggs are small)
    1 cup flour
    1/2 cup milk (I use 1% or low-fat)
    1/2 cup water
    1/2 tsp salt
    2 TBS melted butter

Directions

Measure all ingredients into blender vessel and blend for 30 seconds. Scrape down sides and blend for 15 seconds more. Cover and let sit for an hour so that flour absorbs liquid. (Blend well by hand if you don't have a blender, and they will turn out just as good).

Fry using melted butter in medium frying pan on medium heat. Turn carefully when edges begin to curl away from side of pan. These should make 11-12 crepes. Pour them as thin as possibly without having holes for more delicate crepes. I use about 90% of a full soup ladle for each crepe.

Add 2 tsp of sweetener and vanilla if you want sweeter crepes.

Makes approximately 12 crepes. 1 serving = 2 crepes.

    Excellent recipe. I wind up adding almost another half cup of water to get the batter to the right consistency, but this is the best crepe recipe on the Spark site. Good flavour, and you wind up with a product that is easy to work with if you follow the instructions. - 11/21/10

    This is the recipe I always use. Its delish. I make a mixture of fresh strawberries, cottage cheese, sour cream and powdered sugar to fill them with. I make it once a year for my husband's b-day. - 9/8/10
