Ingredients

    1 (4-ounce) tilapia fillet
    1 tsp olive oil
    juice from half a lime
    Garlic/garlic powder (optional)
    1/2 tbsp chopped fresh cilantro
    1/2 cup cooked spinach
    1/4 cup chopped fresh tomatoes

Tips

We love this dinner served with asparagus.


Directions

Preheat the broiler.
Brush tilapia with olive oil.
Squeeze on lime juice, then sprinkle with (optional) garlic powder and cilantro.
Broil in oven 6 inches from heat, about 5-7 minutes, or until fish flakes easily with a fork
While tilapia is broiling, place spinach in microwave safe dish.
Toss with garlic powder or minced garlic (optional).
Cook according to package directions.
Keep covered and warm until fillets are done.
Spoon cooked spinach on a plate, place fish over spinach, top with chopped tomatoes.
Serve with herb bread if desired.
Recipe is for an individual serving; multiply recipe by the number of desired servings. (Works as a dinner for one or 12!)

    This was quite good and different than any other way I have made fish. I used fresh spinach and sauteed it with the garlic and was pleasantly surprised at the flavor of this simple combination. I will definetely do that one again. Also I will be making the fish again. - 3/16/08

    I loved this recipe! I did change it by putting the parmesan directly on the fish, topped it w/the cilantro (I didn't have any tomatoes). I substituted the spinach for stir-fried bok choy with a tsp of olive oil and served it w/a side of w/w couscous (w/dried cranberries and grapes). - 7/28/09

    This dish was delicious. The whole family loved it. I put the tomatoes and parm cheese on for the last couple of minutes of cooking and that worked wonderfully. Will definitely make this again and again. - 7/18/09

    Another delightful meal thanks to Sparkrecipes. I used fresh salsa since that was available. I added more lime than called for at other members suggestion. It turned out beautifully and looked fancy. A keeper for those formal dinners were I'm trying to impress guests. - 2/4/08

    garlic was added and I used fresh spinach and also fresh basil. This is simple and a great basic recipe. You can use this base for almost any shellfish or seafood as well. What ever is on sale. Please use common sense when using any fish item/seafood or shell fish. - 8/18/09

    Be sure to get Tilapia farmed in the USA, grown in environmentally healthy systems. Chinese Tilapia is often raised in unhealthy conditions that can compromise the quality of the fish and adversely affect the environment. - 6/5/10

    If the recipe calls for serving the fish over cooked spinach, SHOW it placed on cooked spinach--NOT with broccoli spears. If it says "topped with tomato", than ADD tomato to the photo. If cilantro is chopped and on top, don't show it as a sprig for garnish. - 7/21/12
