Number of Servings: 8

Ingredients

    4 medium Cucumbers (peeled)
    .5 cup white onion chopped
    1 cup distilled white vinegar
    .5 cup granulated white sugar

Directions

Place 1 cup distilled white vinegar in a sauce pan. Add 1/2 cup granulated white sugar to the vinegar and heat to boiling, stirring until all the sugar has dissolved. Boil supersaturated mixture for one minute, then remove from heat.

While vinegar mixture cools slightly, thinly slice the cucumbers. (My mom thought that the thinner the slice, the better they taste, but thinness is really a matter of choice.) Place sliced cucumbers in storage container. Chop 1/2 cup of white onion (red does not provide the right flavor) and add to cucumbers.

Pour vinegar/sugar mixture over cucumbers/onions and stir gently to mix ingredients. (Vinegar mixture will still be warm.) Cover storage container and refrigerate for at least 4 hours, although overnight is better. When ready to serve, remove container from refrigerator, gently stir and serve. Makes 8+ 1/2 cup servings.

    I left part of the skin on the cucumbers - somewhere I read that it helps digestion, the peel has more vitamins and it adds color to the salad. Other than that I changed nothing and it was delicious! Thank you for sharing! - 7/4/11

    I love this recipe and have been making it for years. Thanks for the reminder. Sometimes old favorites go by the wayside. I water down the vinegar, decrease the sugar a bit and am sure to leave it in the refrig overnight to get full flavor. - 8/28/09

    This is the same recipe that my mother and grandmother used, except we slice the onions, and add salt and pepper to taste. I have always loved this simple recipe , as does everyone else. I also have tried Splenda, which works fine for me. But my family says the can taste a difference - 8/14/09

    I used Sp;lenda rather than sugar - and I think it tasted as sweet as Grandma used to make - and I agree that only a white onion ( I prefer Vidalia actually) rather than a red onion would be best. - 8/1/09
