Introduction

Delicious and healthy. Feels like you are eating guacamole, but it is mostly cucumbers. Delicious and healthy. Feels like you are eating guacamole, but it is mostly cucumbers.
Number of Servings: 8

Ingredients

    2 long seedless cucumbers
    1 haas avocado
    1 small or 1/2 large sweet onion
    2 tsp guacamole powder (such as Lawry's)
    1 second spray of canola oil spray (optional)

Directions

Makes 8 1-cup servings:

Cucumber: cut lengthwise twice (making it into quarters), then slice about a half inch thick, into little chunks.

Onion: slice very, very thin and then pull it apart into little rings or slivers

Avocado: scoop it out of the skin and remove the pit, then cut into little chunks, about a quarter to a half inch cubed. (It will get mushed.)

Put these veggies in a bowl and toss together. Spritz canola oil for about one second to wet it all with oil (optional)

Shake on the guacamole powder: about one or two teaspoons.
Mix it all up.

    Incredible!
    Awesome! Love the calorie savings while still getting the taste of having guacamole. Used this on Chicken Fajitas, and by using FF Greek yogurt instead of sour cream, skipping the cheese and loading up on veggies, this cucumber and avacado salad makes the perfect healthy Fajita! - 7/14/10

    This really sounds like a great recipe. I am planning on serving this next Friday evening with the Salsa Chicken. I thought I would chop the cucumber & onion with a chopper to make it finer. Not sure if this will cause too much liquid. I'll let you know. - 8/1/09

    I love guacamole but hate how quickly the calories add up-- cucumbers are a great solution! I didn't have the Lawry's so I did my usual lime juice/serrano pepper/cilantro mix, and I misread the recipe and used two avocados. I'll keep playing around with it, but I think this is a keeper!
