I have tweaked this recipe over the years as a full fat recipe, but now that I'm eating healthy, it's been transformed into an easy, yummy recipe that fits into my daily tracker! Ingredients

    3 Chicken Breasts - no skin
    1 T. Olive Oil
    1 onion chopped
    1 4 oz. can green chilies
    2-3 T. Chili Powder
    2-3 t. Ground Cumin
    Ground Red Pepper to taste (I like a lot)
    Little bit of salt and pepper
    4 oz. Low Fat Cream Cheese
    8 Whole Wheat Tortillas
    1 Can Stokes Green Chilie Sauce with Pork
    1 C. Light Sour Cream
    1/2 C. Shredded Cheese

Directions

1) Chop onion
2) Add olive oil to pan and saute onion for 2-3 minutes
3) Add green chilies & chicken breasts
4) Season with Chili Powder, Cumin, ground red pepper, salt & pepper
5) Cook until Chicken is done.
6) Remove chicken from pan and shred with two forks
7) Remove onion/green chilie/spice mixture from pan and put into a bowl
8) Add cream cheese and shredded chicken - mix
9) Add filling to the 8 tortillas and roll into enchiladas
10) place in shallow 9x13 pan - spray with a little non-stick spray first
11) mix can of green chili sauce and low fat sour cream
12) pour over filled tortillas
13) Cook in a 350 degree oven for 35-40 minutes
14) sprinkle cheese over the top and melt
15) Enjoy - Makes 8 servings

    This recipe sounds good....
    But tell me, where do you find stokes green chili sauce with pork? If I cannot find it here, what do you suggest as a replacement?

    You can really use any canned green chili sauce you find in the mexican section at your grocery store. I often use different kinds - they had the Stokes listed in the nutritional area, so I chose that kind. Maybe I should have listed it in more generic terms, but feel free to use whatever you find!

    Incredible! My whole family LOVED it and it's hard to get them to eat healthy. I did as another person suggested and substituted the green sauce with salsa as well and it turned out YUMMY! Thanks for this recipe. - 4/26/10

    These are really good, I thought they might be a little weird because of the cream cheese and green sauce/sour cream mix but they are really good! I'm happy that I have leftovers for lunch tomorrow :) - 1/21/10

    Really really good!!! I swapped out some "low carb whole wheat" tortillas at ~85 cal/12 in tortilla. Also swapped out Fat free Greek yogurt for the sour cream, and it came out delicious! that could save you ~75 cals/enchilada if you follow everything else! - 4/13/10

    These were awesome ! Loved them. And I am on Weight Watchers and made 6 large ones (vs 8 per recipe), and they were 7 pts each ! I didn't use the green chili sauce, I subsituted it with salsa (mixed that with the sour cream), for the sauce topping. Even my kids liked them! - 2/11/10

    I have made a similar recipe from Campbell's soup, but my husband liked this one better. It's a keeper. I halved the sour cream and chile sauce so less calories and sodium and it turned out just a touch dry so will add more chile sauce next time. And there will definitely be a next time. - 1/7/10
