Introduction

Delicious, healthy, intensely chocolate brownies with a hint of sweetness. If you like them sweeter, add 1/2 cup more of Agave nectar to the recipe. Only 98 calories & 2.6 grams of fat per serving! Ingredients

    2 c Whole Wheat Flour
    1/2 c Cocoa Powder, Hershey's, Special Dark
    1/2 t Salt
    1/4 t Baking Soda
    1/2 c Vegan semisweet chocolate chips
    1/2 c Walnuts, chopped
    3/4 c Raw Agave Nectar
    1/2 c Applesauce, unsweetened
    2 t Pure Vanilla Extract
    2 c Zucchini (Finely Shredded)

Directions

Preheat oven to 350 degrees. Mix dry ingredients together in a bowl. Stir in chocolate chips & walnuts. Mix wet ingredients together in a separate bowl. Add to dry ingredients, folding in carefully until just barely moistened (some dry ingredients will still be visible). Do not be tempted to overmix even though the mixture is very thick. Gently fold in grated zucchini. Spread in a lightly greased 9x11" baking stone or pan. Bake for 25-30 minutes, testing with a toothpick. Let cool & cut into 24 squares.

    My wife has been making these brownies & they are great. You can't even tell that there's zucchini in them because it's shredded so finely. I'm not a big fan of sweets, so these are perfect because they're not overly sweet. - 8/9/09

    I had to change my rating -- these are now a go-to snack! They aren't very "brownie"-like -- more like cocoa cake with some chocolate chips, but they satisfy my craving for something chocolatey. I wrap & freeze these individually so they're ready when needed -- I like them better a little frozen. - 8/10/12

    I definitely undermixed the batter, based on the directions which stated that "dry ingredients would be visible". I also should have shredded the squash finer. I used a box grater and will run a knife through it next time.I will add a little water too. All that aside the taste was very good. - 9/9/10

    Dark chocolate - agave - and whole wheat flour...you couldn't ask for more healthy. My grating on the zucchini was regular and on the next go round I'll definitely grate it finer. Tasted great!!! I'll probably leave the nuts out too as I'm not a huge fan of nuts in brownies. Love it, love it! - 9/1/09
