Introduction

This is a fast, easy and delicious way to get in fresh raw broccoli. I adapted the recipe from the Whole Foods Broccoli Crunch Salad. The ingredients are simple and relatively inexpensive but they charge $8.49 a pound for it....much cheaper to make at home....and fresher. Number of Servings: 6

Ingredients

    6 cups broccoli florets cut into bite
    size pieces
    2 T finely chopped red onion
    1/4 C chopped cashews (can substitute toasted almonds)
    1/4 C raisins
    2 pieces fried and crumbled bacon
    1/4 C good mayonnaise
    1 T apple cider vinegar
    1-2 T honey (according to taste)
    1/8 tsp cayenne pepper (or a pinch - to taste)


Directions

Wisk together mayonnaise, cider vinegar, honey and cayenne pepper to make dressing.
Combine all dry ingredients and pour dressing over salad, mixing well and serve.
Serves 6

    This is awesome. I think I'm going to have to keep a constant supply on hand. As noted, a delicious way to get in raw broccoli. It's incredibly satisfying. My boyfriend loved it too. He helped me with cutting up the ingredients and seemed very surprised it tasted so good! - 8/16/09

    I know.....it's amazing to me how such simple ingredients combined can be so delicious. The healthy part, is the icing on the cake. I'm so glad you liked it. I just had to find a cheaper way to enjoy this without paying almost $9.00 a pound for it.

    I didn't have any cayenne pepper so I omitted it but it still was really good. I love the mix of sweetness and crunchiness. Plus it was a yummy way to get some good fresh veggies in. - 9/24/09

    This was very tasty! I used light mayo and couldn't tell the difference! I would say that I didn't get a full 6 cups of serving for the portion it was more like 4-5. - 2/15/10
