Number of Servings: 4

Ingredients

    4 skinless, boneless chicken breasts
    4 slices part-skim mozzarella cheese
    1 egg white, slightly beaten
    2 Tbsp flour
    1 Tbsp grated Parmesan cheese
    1 tsp snipped parsley
    1/4 tsp. paprika
    dash pepper
    nonstick spray coating

Directions

Rinse chicken: pat dry. Use a sharp knife to cut a small pocket in the thickest side of each chicken breast.
Insert a mozzarella slice in each pocket.
In a small mixing bowl beat egg white slightly.
In another bowl stir together flour, Parmesan cheese, parsley, paprika and pepper. Dip chicken in egg white. Then, coat with flour mixture. Spray a baking dish with nonstick coating. Arrange chicken in dish. Bake in a 375 degree oven for 20 to 25 minutes or till chicken is tender and no longer pink.

    Very Good
    It was quite delicious though the only problems were that the breeding was still really powdery when I took it out, it took 45 minutes instead of 20-25, and the cheese didn't really stay inside the chicken. Overall though I just scooped some of the cheese that oozed out from the pan and put it back - 2/29/16

    It was very good, but needed a little more flavor in the chicken. (not too sure exactly what to add, but it needs something). Make sure that you don't over-coat the chicken in the flour mixture- I would recommend dipping it in the flour mixture before stuffing it. - 2/11/10

    I enjoyed this recipe, my husband not so much. The baking time for the chicken was a lot longer for me than the recipe stated. I added some tomato sauce for added flavor. I might make it again, but will probably tweak a few things next time. - 2/1/09

    Had this for dinner the other night with someone else recipe for italian baked potatoes and it was very good. the parmesan crust is excellent. I added a little pasta sauce to the chicken for an extra shot of flavor. - 6/19/07
