Ingredients

    Fresh spinach 900 grams
    2 small onions, grated
    1.5 cup short grain rice
    2 tbs olive oil
    salt
    pepper
    juice from 1.5 lemon

Directions

In a large pot, soften the onion with a little bit of olive oil (no more than a tsp). Add the spinach and stir it as much as possible so it will slowly shrink.
Add approx. 1 - 1.5 cups of water and boil the spinach for a few minutes till it softenes. Be careful not to add too much water.
Add the rice and let it boil for about 20 minutes or till the rice is cooked. By that time it shouldn't have much water left.
Five minutes before it's done, add salt and pepper to taste, the lemon juice and the remaining olive oil and give it a stir.

This recipe is also made with tomato sauce. Cook as above but at the beginning before adding the rice, add some tomato sauce. Also, some people like to add dill.

    I used brown rice and a lemon-pepper seasoning mix. I also added garlic powder. Although it tastes alright, I find it's lacking in flavor overall. I think I might top it with cottage cheese. - 10/20/10

    This is a traditional greek dish...named SPANAKORIZO...I love it and cook it very often..was glad that someone had already entered it in sparkrecipes so that i could just add it to my meal planner...Add with the onions and 2 cloves of crushed garlic....delicious...... - 12/13/07
