Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
1/4 cup granulated sugar
1/4 cup granulated Splenda
1/2 teaspoon baking powder
1/2 tablespoon baking soda
1/2 teaspoon salt
2 tablespoons unsweetened cocoa powder
2 egg whites (or 1 large egg)
7/8 cup milk
1/3 cup unsweetened applesauce
3/4 cup semisweet chocolate morsel
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 tablespoon vanilla
Directions
Turn the oven on to 350°F.
Spray cooking spray on four 12 cup muffin pans, or four 6 cup Texas size muffin pans.
Combine both flours, cocoa, sugar, Splenda, baking powder, baking soda, cinnamon, nutmeg, and salt into a large mixing bowl.
Combine the milk, eggs, vanilla, and applesauce in a medium mixing bowl, add this to the flour mixture; mix it until it is moist.
Stir in 3/4 cup chocolate morsels and any nuts if desired. Pour into waiting cupcake pans.
Bake these at 350° F for 15-20 minutes if you are using the 12 cup pans. Bake for 20-25 minutes if using the 6 cup pans. Let cool, remove. Let cool on wire racks if desired.

DELICIOUS!! Almost more of a cupcake than a muffin..so glad I made them! Will definitely make again..maybe even double the recipe! I made mine a little big so it only gave me 9...but boy are they good - 4/24/10
