Introduction

This couscous is fast, easy and the veggies are interchangable to whatever you have on hand. This couscous is fast, easy and the veggies are interchangable to whatever you have on hand.
Number of Servings: 4

Ingredients

    1 box Near East Plain Couscous
    1 tbsp Olive Oil
    1 Orange Bell Pepper
    1 cup Broccoli (frozen, thawed and prepared)
    2 medium Tomatoes
    3 cloves Garlic
    1 medium Onion
    2 cups Water

Directions

Chop onion, garlic, pepper. Heat olive oil in large skillet and sautee onion, garlic and pepper. Once the pepper starts to soften, add 2 cups of water and bring to a boil. Push vegetables to one side and add the couscous. Let stand for 5 minutes.
Add broccoli and tomatoes and fluff couscous.
Serves 4.

    P.S. 1 box = 1 cup. See another very similar recipe in the listing that recommends vegetable stock instead of water to enhance taste; less liquid, easier to follow directions for cooking the couscous. - 9/1/07
