Introduction

Ingredients

    • 3/4 lb. salmon piece
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/8 teaspoon thyme
    • 3/4 tablespoon margarine
    • 3/8 cup light cream
    • 3/4 onion sliced
    • 1 parsley sprig
    • 1 garlic cloves, quartered
    • 1/4 bayleaf
    • 1/2 cucumber peeled, cut in strips

Directions

1. Combine salt, pepper and thyme then rub all sides of the salmon. Melt margarine in baking dish then add salmon and coat with the margarine. Add light cream, onion slices, parsley, garlic and bayleaf and arrange cucumber strips around the fish.



2. Bake covered for forty minutes at 350° F or until center bone can be easily removed. Remove and discard bayleaf, onion, parsley and garlic before serving.



Makes 4 servings.

    It says salmon piece and I was thinking filet. But it must mean 'steak' because of the bone removal. The steak would be better because of the evenness of the thickness. We have salmon most every week. I'll try this one. Discarding bay leaf? Yep! Don't want to swallow one of those babies! - 11/30/08

    Good, but we love our bbq with a light drizzle of lemon, butter, garlic and/or teriyaki instead of ingredients before. Delicious grilled in aluminum foil. Don't need much as far as butter and can eliminate it, if you wish. - 11/30/08

    I would use Olive Oil instead of margerine for less saturated fat and a healthier oil option - but sounds good! I would also use wild caught salmon to avoid added perservatives & color - - 6/4/09

    I just put a little olive oil, salt and smidge of cayenne pepper and bake. Then after squeeze on lemon and also if desired, a melted butter with basil is nice on top. - 11/30/08
