Ingredients

    3 eggs
    1 cup canola oil
    2 cups sugar
    2 cups grated zucchini
    1 TBSP vanilla
    1 tsp baking soda
    1 TBSP cinnamon
    1 tsp nutmeg
    1 tsp salt
    3 cups flour

Directions

Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. One serving=1 slice.

    Very good, but insanely high calorie as is. Substitute egg whites instead of eggs, applesauce instead of oil, and I cut the sugar in half, which still tasted great. Made two, regular-sized loaves, which I baked for 50 minutes a piece. - 7/13/08

    I baked these tonight, I used egg beaters, applesause, and splenda, also used 1 cup of wheat flour and 2 cups white flour. Made 9 large muffins. Pretty Good. Have room for some nuts next time. Will keep this recipe with changes. Thanks BBJKASHAW. Forgot to add I only used 1 1\2 cups of splenda. - 7/8/09

    Tasty and turned out well. Used 2 eggs instead of 3, 1 c applesauce instead of the oil, and 1/2 c sugar and 1/2 brown sugar and 1-1/2 tbs cinnamon. Took a little longer to bake, but it was well worth it. - 7/3/12

    I made this zucchini bread today, and I have to say that it was a hit with my entire family! It is an easy-to-make recipe with basic ingredients. I already had everything I needed in my cupboards/fridge. I only used 1 cup of sugar, and that was plenty. Next time I might only use 3/4 cup of sugar. - 9/4/10

    Two cups of sugar sounded like way too much so I used 1/4 c. brown sugar and 3/4 c. granulated sugar. I also added 1 tsp. lemon juice and walnuts. It was very tasty and moist - it did not taste like it needed any additional sugar! - 9/5/10

    This is wonderful. It's moist and full of flavor. I used less sugar (1 & 1/2 cup) and baked it in a regular loaf pan as well as 3 mini pans. My husband ate most of it. I gave away two of the mini loaves and froze the other. - 8/19/10

    This is the recipe I've used for years. It's a little dry, sometimes, so don't overcook. I use 1 cup brown sugar & 1 cup white. It adds a little heartier taste. I also add 1/4 teaspoon baking powder & extra cinnamon! I cook in 2 8x4 pans for 50 minutes or so on 325, & add one cup raisins sometimes. - 8/15/14

    Very good! I cut down on the amount of sugar but was kind of sorry I did, since I made this to take to work and my co-workers aren't interested in "diet" food. Next time I'll make it as the recipe calls for. Delicious! - 9/6/13

    I made mine with the same subs. as GODSBEST except a few minor changes. A little bland but good with just zucchini but I think with apple chunks, raisins and walnuts mixed in it would be even better! Still an excellent recipe! - 8/14/13

    My recipe calls for two eggs and ground cloves instead of nutmeg. I also add 1/2 tsp of baking powderand one cup ground walnuts. I bake mine at 350 for about 50 min. We love this recipe! - 10/19/12

    This recipe is similar to the one i've baked for years exept I only add 1 tsp vanilla and omit the nutmeg. I also add 3/4 cup of raisins and 1/4 cup more sugar and 1/4 tsp off baking powder as well. AMAZING RECIPE - 6/1/11

    1 SVG=1 2.5oz SLICE I make this nearly identical, and it's frozen and saved for special occasions. The only differences are: I don't use nutmeg, but I add 1/2 c chopped walnuts, and I add 1 t baking powder also, not just baking soda. I also bake at 325, for 45 minutes; using toothpick test 4DONE - 11/4/10

    I made 4 small loaves like the recipe calls for, but they oozed over the sides and took 15-20 minutes longer to bake. Next time, I'll make 5 small ones with that recipe. Otherwise, it is delicious and even my zucchini hating other half liked it! - 8/14/10

    Use egg beaters or similar to get the cholesterol down, and use applesauce instead of oil to get the fat down. Still will taste just as good! - 7/29/07
