Introduction

A yummy pasta salad w/ marshmallows and fruit! A yummy pasta salad w/ marshmallows and fruit!
Number of Servings: 25

Ingredients

    1 cup sugar
    2 tbsp flour
    2 1/2 tsp salt
    1 3/4 cup pineapple juice
    2 eggs, beaten
    1 tbsp lemon juice
    1/2 package Acini de Pepe pasta
    3 11-oz cans Mandarin oranges, drained
    2 20-oz cans chunk pineapple
    1 20-oz can crushed pineapple
    9 oz Cool Whip Free
    10.5 oz bag of mini marshmallows

Directions

Drain oranges and do not save juice. Drain chunk pineapple and save 1 3/4 cups juice. Comine sugar, flour, and salt in a medium saucepan. Add eggs and stir. Add pineapple juice gradually while stirring. Bring to a boil, stir constantly. Reduce heat and stir until thick. Remove from heat and add lemon juice. Let cool. Mix fruits in seperate bowl. Cook and drain pasta. Let cool and mix pasta w/ sauce. Refrigerate fruit and pasta in seperate bowls over night. Add Cool Whip and fruit to pasta in a large bowl. Mix and add mini marshmellows. Refrigerate and serve.

    Incredible!
    I make this all the time! The only thing I do different is use the juice from both the mandarin oranges and pineapple. I also use the whole box of pasta so it makes a ton! It is so good and is always a hit! - 5/19/09
