Introduction

Number of Servings: 6

Ingredients

    2 bonless skinless chicken breast grilled and shredded or cubed (I marinade in BBQ or hot sauce for extra flavor)
    4 tbsp fat free mayo
    1 tbsp bbq sauce (or hot or other low-cal fat free sauce)
    1 ounce crushed nuts, I prefer walnuts for their texture
    .25 diced apple
    1 tbsp diced onion

Directions

Grill chicken. *7 minutes on George Foreman.
Dice onion and apple and crush walnuts.
Combine ingredients and mix well. You can use more or less mayo depending on consistency of salad (at 15 calories a tbsp, it's okay to be liberal).
I like to chill over night to let the flavors mesh, but you can eat right away.
I eat with 1/2 a serving of reduced fat crackers, a lite english muffin toasted or on top of salad mix (no need for dressing then).
Depending on how much you use, this will yield between 6-8 portions.

    OMG just had this for lunch I changed a couple things like I didn't use onions and I used a grannysmith apple this is sooooooooooo good I am thinking about having it for dinner as well! Yummy - 8/28/07

    This is Great, quick & easy to prepare. Ingredients seemed an odd combination but once together the flavors blend nicely. I made as directed minus apple because I didn't have one. Held its own w/a heavily grained/seeded bread. Will Make Again and be sure to have an apple on hand. - 6/12/12

    GREAT!! very tasty and a great twist on regular chicken salad! The bbq sauce tastes amazing. I used 2 tbs regular mayo and 2 tbs fat free plain yogurt since I only had regular mayo on hand. - 7/9/10

    Wow Delicious. I was looking for a simple fast recipe for lunch and this exceeded my expectations. I changed the recipe a bit.I did not have a grill and replaced the onion for shredded lettuce. For the chicken I diced and put over sliced red pepper in the oven. Served with corn tortilla.YUM - 2/9/13

    Used the granny smith apple. Delicious with a twist. Also marinaded the chicken in KC Masterpiece Garlic Balsamic rather than BBQue sauce & used a little for flavor. Yum - 6/9/11

    Very good! I love chicken salad and this recipe was a nice twist with the BBQ sauce. Unfortunately my batch wasn't quite as healthy because I only had lite mayo instead of fat free. I also substitued raisins for apples - but still yummy! - 9/23/07
