Ingredients

    2 1/2 cups quick cooking rolled oats
    1/2 cup all purpose flour
    1/2 cup oat flour
    1 egg white
    2 Tbsp flaxseed, ground
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/8 tsp allspice
    1 tsp cinnamon
    3 Tbsp smart balance margarine 50/50 blend solid bars
    2 Tbsp canola oil
    1 cup firmly packed light brown sugar
    1/3 cup apple butter
    2 tsp vanilla
    3/4 cup cherry-berry blend (dried cherries, dried blueberries and dried cranberries)

Tips

Oatmeal cookies are a great way to increase fiber and add bulk to your diet while enjoying something sweet.
The acid in the berries replaces the usual sweetness of raisins and also helps to soften the oat flour. Each cookie offers 1 1/2 grams of fiber and very little saturated fat. If you choose to use unsalted butter instead of the smart balance margarine, you would want to add 1/4 t kosher or sea salt to the recipe.

This recipe was created by Patricia Huller C.C.E., M.Ed., a culinary instructor and healthy baking expert from Cincinnati State's Midwest Culinary Institute, especially for SparkRecipes.


Directions

Preheat oven to 350 degrees

Stir together the oats, flours, baking soda, baking powder, cinnamon, allspice and ground flaxseed. In a separate bowl, use a wooden spoon and cream together the smart balance margarine and oil until well blended. Add the brown sugar and mix until fluffy; this will take 3-4 minutes. Add the egg white, apple butter, vanilla and the berry blend. Add the dry ingredients until a dough forms. You may refrigerate the dough at this point for up to 24 hours.

Drop the cookie dough onto baking sheet either lined with parchment paper or a silicone baking sheet liner. Each cookie should be about 2 tablespoons of dough. Moisten your hands with water and lightly shape the dough into a 2 inch round.

Bake the cookies 7 minutes. If you are baking 2 trays of cookies, switch the position and rotate the pans so that the cookies will bake evenly. Then bake until they are lightly brown about another 7-9 minutes. (Bake 14-16 minutes total.) Remove from pans carefully and let cool on a rack. Store in am airtight container.

Yield: 40 2 inch cookies

    Oat flour can be made by simply grinding up regular old-fashioned oats in the blender or food processor. One half cup rolled oats equals one half cup oat flour. - 2/7/12

    To answer a couple of previous ?'s ..I would assume it is 1 egg white. applesauce could be replaced for the apple butter.(apple butter is usually thicker than applesauce) & use whole wheat flour to replace the oat flour. I intend on using wheat germ inplace of the ground flax. a healthy cookie. yum - 12/16/09

    I found it was hard to find apple butter so I made my own out of apple sauce, which wasn't too bad.
    I found the cookie quit heavy althought it did have a nice taste, it wouldn't be a regular cookie I would make.

    Note: One cup of APPLESAUCEcan be subbed for canola oil and it doe not spoil taste! I used what I had on hand~wheat germ instead of flaxseed,old-fashioned oats instead of rolled, and only dried cranberries,and they taste GREAT!!     My 16 yr old DD made the recipe for me. Only made about 24 total, not 40. We subbed wheat germ for flax, apple sauce for apple butter. Perhaps should have used more apple sauce, the balls never flattened. the second batch, I smashed slightly, still didn't flatten. Wonderful taste! - 12/26/11

    Sounds very like a recipe I used to make and have been looking for! But too many "non-standard" adds, like oat flour, apple butter, flax seeds.

    This sounds yummy! I will try it sometime, with gluten- free flour, and without the cranberries-- too acidic for me. I might use NSA applesauce instead of the apple butter. Just as a note, most dried cherries & blueberries have sugar added to them. - 12/13/09

    I rehydrated the fruits with crystallized ginger..cut the sugar some..added LOTS OF SPICES and used some mixed nuts and sunflower seeds and some wheat germ and coconut flour. Baked at 325 in a cake pan....cut into bars for an easy quick breakfast. They are DELICIOUS...glad I read reviews and upped - 11/28/17

    Making for a student group at the university, so I doubled the recipe and sure glad that I did! As I now see mentioned, these did not make but about half the number of cookies indicated, and that was with not quite 2" size.
    Only mod - used butter and subbed peach butter for apple butter.

    These sound really good....are they crunchy, chewy ,crisp orsoft? W hat is the texture? I want my home made cookies to be chewy.
    I am also surprised over the amount of people who have never heard of Apple Butter.It is a spread (like jam) made of apples & cinnamon, not really like applesauce at all

    In re: APPLE BUTTER ---
    this is usually found where the preserves and jams are located, possibly near the peanut butter. It's a brown paste, thicker than preserves but thinner than peanut butter. Most stores I frequent have it. Delicious!

    I didn't have a few of the ingredients so replaced oat flour with regular flour. Didn't have flaxseed so left it out. Didn't have apple butter/sauce so used 1/3 cup heart healthy margarine along with the 3 tbsp. Next time I may use less brown sugar or use 1/2 cup Splenda brown sugar blend. - 12/1/10
