To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

Ingredients

    1 potato per person

    For each potato:
    about 1/5 onion
    1 tsp parsley
    1/2 egg white (you can use whole eggs if you want: 1 per 5 potatoes (nutritional info uses egg whites))

    olive oil

Directions

Grate potato with a fine grate, the hand-held kind works great (so to speak).
Grate onion or chop very small.

Put onion and potato in strainer and use your hands to press out excess fluid. The more fluid you get out, the better the latkes.

Put in bowl, mix in parsley and egg. Shape into meatballs about 1.5-2 inches diameter.

Put a thin film of olive oil (no more than that--maybe a Tbsp. Canola's okay too) in a skillet. Put latke balls into skillet and flatten. Brown one side, then the other. Serve hot.

Traditionally eaten with sour cream and applesauce. (Not included in nutritional info).

Makes about 5 latkes per potato (a serving is one potato).

    Sounds awesome! I've also read about putting the potatoes in cheese clothe or a cloth bag to squeeze out the extra moisture- then you move it around and squeeze out some more!! - 12/12/09

    Potatoes are gluten free. Gluten is anything with wheat, rye, barley and contaminated oats. - 2/8/10

    Incredible!
    Yuuuummm! Just made a whole 5 potatoes' worth of these, to be ableto take some for lunch this week. Didn't have parsley, so used dill instead, and added "Vegeta" vegetarian spice, as well as some gluten free oat flower, because I couldn't get much of the liquid out. DELICIOUS. - 8/25/13

    your recipe sounds wonderful, but i'm confused about it's category - potatoes are extreme sources of gluten, what was your thought? - 1/30/10

    Potatoes have no gluten from wheat, barley or rye, which is what we gluten-intolerant peeps need to avoid. That's what gluten-free means.
