Ingredients

    1 Tbsp Olive Oil
    4 thinly sliced boneless, skinless Chicken breast halves (4 oz each)
    Salt and Pepper
    4 tsp whole wheat flour
    1 med shallot,minced
    2 Tbsp capers
    1/2 c reduced sodium chicken broth
    1/4 c fresh lemon juice
    2 Tbsp minced fresh parsley


Directions

1. warm oil over medium. Season chicken breasts with salt and pepper then lightly coat with flout (1tsp each breast)
2. Lay chicken in skillet, cook 2-3 mins until golden brown. Reduce heat to med. Turn breasts and cook 2-3 minutes longer. Remove breasts to serving platter.
3. reduce heat to low; add shallots and capers to skillet. Cook 30 secs while stirring. Add broth and juice, cook 1 minute until incorporated and thickened. Stir in parslely; pour sauce over chicken.

    Loved this! I didn't realize I was out of chicken broth, so I substituted cooking sherry for it, but it turned out great! I think next time I'll keep the sherry and still add the chicken broth bc there didn't seem to be enough "sauce". - 10/22/09

    I just made it..however I put the chicken back in the pan because I don't understand how the lemon juice and stock would thicken without the flour that was on the chicken ...it's good and lemony!! - 11/9/07

    Incredible!
    My husband who doesn't really care for chicken went back for seconds. This was a great recipe. The sauce wasn't as thick as we like, but no problem, just added a little arrowroot and it thicken right up and didn't change the nutritional value. Diffinently would make this again. - 9/26/07
