Introduction

If you like catfish, you will really like this! I use it during Lent - makes a great family dish! If you like catfish, you will really like this! I use it during Lent - makes a great family dish!

Ingredients

    1 lb catfish
    1 tbsp butter
    1 c. milk
    2 tbsp flour
    1/4 tsp salt
    1/4 tsp garlic salt
    1/8 tsp pepper
    1/8 tsp dried thyme
    dash of oregano
    1/4 cup green onions
    paprika

Directions

Oven 350.
Place fish in baking dish. Dot with butter.
Thoroughly blend milk and flour. Cook over medium heat, stirring constantly until sauce thickens and is bubbly. Cook and stir 1 minute longer.
Stir in salt, garlic salt, pepper, thyme, oreganoand green onion. Pour mixture over fish. Sprinkle with paprika. Bake uncovered for 20-25 minutes.
Recipe says serves 4, but we can feed all 5 of us with it!

    I chose to make a rue with the flour and butter and then add the milk. You need to whisk this pretty well. I added the catfish to the same pan, which is oven safe. I omitted the green onions and changed the garlic salt to garlic powder. Yummy! - 2/10/10

    Very good recipe -- thank you! I used organic nonfat milk and probably needed to add a bit more flower, since the sauce was thin (but yummy!). May try mixing with some nonfat yogurt in the future. Very nice to find a yummy non-fry non-cajun option for catfish! - 5/26/09

    This awesome was perfect! I have never tried Catfish before, and this went with it perfectly! I don't know where people are saying that there is not enough sauce, as we had plenty.     As the first reviewer did, I used the butter in the roux instead of putting it directly on the fish and garlic powder instead of salt. It is quite salty even that way. It was delish. Kid approved and husband approved as well. - 1/20/11

    I tried this recipe with flounder instead of catfish. I think I may have used too much thyme, as the flavor was too strong. I will make it again, with less thyme. It goes well with rice, as you can spoon the sauce over the rice. I'll try it again with less thyme and with catfish. - 10/10/10

    Ohmygoodness, this is SO GOOD! I used 1% milk and 1/2 tsp onion powder since I didn't have green onions. The actual calories eaten will be less if you don't eat all the sauce, but the sauce would be good over rice or something else. Yummy, herby creaminess! - 2/24/09
