Introduction

Number of Servings: 4

Ingredients

    One head of cauliflower, chopped
    1 Tbsp Smart Balance spread
    1/4 c reduced fat sour cream
    1 tsp garlic powder
    salt and pepper to taste

Directions

Chop cauliflower and place in sauce pan. Cover with water and bring to boil. Simmer 15-20 minutes or until very soft. Drain water. Add other ingredients. Beat with hand mixer until smooth and creamy.

Cream cheese can also be used in place of the sour cream, but this would change the nutritional info. Shredded cheddar can also be mixed in, but of course this would also change the nutritional info.

    i have made this from another recipie and it fooled a 3 year old. the trick is light on the margarine/spread and heavy on the garlic - 1/12/10

    This recipe is very similar to what you find at some restaurants. It's really good esp. ifyou like garlic! LOL!! It seemed a little tasteless tho. Added onion powder, chives and some shredded colby/monterrey jack cheese as well. Thanks for sharing! I will definitely make it again!! - 3/28/10
