Number of Servings: 1

Ingredients

    1 cup spinach
    1 cup broccoli, chopped
    1/2 cup grape or cherry tomatoes, sliced
    1/2 cup cottage cheese, 4% milkfat, large curd
    1/2 cup pasta sauce

Directions

Spray a pan with low-calorie cooking spray and heat on the stove.
Cook broccoli, spinach and tomatoes, adding small amounts of water to create steam as needed.
Once broccoli is softened, add pasta sauce and cottage cheese. Stir until cottage cheese is starting to melt. Serve!
You can change up the vegetables, add onions and mushrooms, or use spices to vary this recipe.

    I like how you get the flavors of lasagna without the pasta. I am trying to keep my carbs down, and this gives me a great alternative to other items I eat all the time. - 1/21/12

    DELICIOUS! This is a great recipe, I added garlic, mushrooms, roma tomatoes, and ground turkey. I also only used 1/2 the cottage cheese (2%) and it was still creamy and delicious! :) - 6/27/11

    I don't know why giving a helpful comment makes someone think it is wailing and moaning and making the submitter feel like crap.     A lot of people substitute cottage cheese for the higher fat ricotta cheese that is in many lasagna recipes. It looks good and I will try this but will be adding things like oregano, basil, garlic, onions to make it more Italian! - 1/17/09

    I loved this stuff! You get a really large serving too. I added half broccoli, half geen peas. I also used non fat cottage cheese. I added onion and garlic too. It was delish and this is going on my favorites! - 7/27/07

    unsure exactly what pasta sauce is...I make mine with olive oil, onion and garlic, loads of tomatoes, touch sugar + salt (old indian trick) capsicums and courgettes = yum + freezes well, use it with lasagnes, spag.bol and kidney beans + rice + chile = mexican -ish! - 5/12/13

    I made this dish this evening for dinner. It was very good. I did add mushrooms, peppers, minced garlic, and onions to the other veggies called for in the recipe. I made a cup of cooked penne pasta to add to it. Made a very filling dinner and quite refreshing. - 1/23/11

    Lasagna is a layer casserole dish of pasta vegetables, cheese and a sauce.Since lasagna refers to the pasta how is this lasagna without any pasta? - 1/21/11
