Ingredients

    1 cup cottage cheese, nonfat
    1 tbsp scallions, raw
    1 1/4 cup green peppers, chopped
    1 1/2 tbsp creamy cucumber salad dressing
    1 dash black pepper

Directions

Finely chop the scallions and green pepper, mix with cottage cheese (nonfat is best, but 1% will work too) and other ingredients--note fresh ground pepper or cayenne pepper are a nice touch and give the salad some extra ZING!
Eat and enjoy!

    I've been making a version of this for years. I just mix in tomatoes (minus the seeds), and any crunchy veggies in the fridge. I can see the dressing working. If you aren't getting enough fat in your diet, that would be a way to get some in. I've never used it but might try it sometime. - 7/21/09

    How very versitile! Never thought of eating it this way! will eliminate the dressing and use the veggies instead. BTW, have others eaten FF cottage cheese w/splenda & cinnamon as a dessert? Yum! - 7/20/09

    CC is a great source of protein. However, it is acidic to the blood stream (the problem with mixing w/fruit - it turns to sugar!). Balance the acidity with alkalizing veggies (tomatoes, cucumbers,etc.) for a great breakfast! Energizing, you won't crash from the carbs... Add avo for the good fats! - 12/4/09

    I love cucumbers.....A great low calorie fill you up kind of snack or with you meal. I sometimes only season them with greek seasoning and a touch of splenda. Sometimes I use low fat yogurt as the dressing with onions as well. Versatile in so many ways. - 7/20/09

    I love Cottage Cheese fat free sometimes I just put it on rye toast or pumpernickel toast and eat it for breakfast.
    the same with Ricotta cheese on Italian bread toasted salt and pepper grated cheese and mutserella cheese sorry I can't spell well.

    This is a good started for home made dressing, to cc add some red onion, real cucumbers, not the dressing, chill over night, pour over a bed of greens add tomatoes! - 7/21/09

    This sounds like a nice change of pace. I never eat peppers --they make my mouth break out -- but the idea of crunch veggies is nice.
    I usually add either crushed pineapple or sliced canned peaches to my cottage cheese.

    This is a wonderful idea. I used diced cucumbers, a radish, one green onion stem, and a dash or two of Italian seasoning rather than dressing. If'd I'd had a tomato, that would have made it even better. Very satisfying. - 6/3/10

    I LOVE cottage cheese! I usually eat my cottage cheese with fruit. I took advice of some of the readers and just added cucumbers & some other fresh veggies and skipped the dressing all together. This way I saved on some calories and enjoyed this salad for lunch. - 1/16/10

    Used it as a side dish to a Stewed Tomato chicken and rice dish. Definitely a contrast in textures and flavors. I was worried about how it would work, but it was a light mix when put on the same plate with the chicken. - 12/10/09

    I am definitely going to try this. I think I may take a cucumber, slice it lengthwise and scoop out the center. I'll chop up the center and mix it with the CC etc, then I will stuff it all back into the cucumber. LIke a stuffed cucumber. Always trying to get in more veggies.... - 12/5/09

    I love to eat tomatoes and micro-greens along side of my cottage cheese with some vinegar and a few drops of oil. I like the idea of adding some cucumber. I'll have to try that. - 12/4/09
