Introduction

Ingredients

    6-8 mangos, without refuse
    1 cup red peppers, chopped
    1/4 cup onion, chopped
    3 tbsp raw cilantro

Directions

Dice mangos, peppers, and onions (spanish/red/purple are best--if they are not available, I would use a small shallot--regular onion is far too strong); use whole cilantro leaves torn apart by hand.
Toss ingredients together and allow to stand in fridge for at least 2 hours and serve.
The mixture will create its own dressing and it does not require any additives at all. Wonderfully delicious on its own.

    I love Mango salad. I maranate jumbo shrimp and purple onions in asian ginger dressing. I cut the firm mango and onions julienne style. I serve on a bed of spinach leaves. Everyone goes wild for this salad. The color is so beautiful...you will take pictures as I do. - 2/24/09

    I double the onions, add about 1/2 a medium jicama, sliced in matchsticks, several chopped tomatoes, 2 tsps. minced garlic, 1/2 a chopped pickled jalapeno, 1/8 cup lime juice, and crushed red and black pepper...good as salad or salsa. You can also add avacado and cumin for a chunky guacamole. - 3/13/08

    sounds good but when I make this I add 1 crushed garlic clove, 1 tbsp of fresh lime juice and 1 finely chopped jalapeno pepper- either way it's bright and delicious- super with grilled salmon - 3/13/08

    I have made something similar to this before, but it was called mango Salsa. You just add fresh squeezed lime and use spanish onions. Then let it refrigerate so that the flavours may mingle. It's a great dip and amazing with home made pita chips. - 3/13/08
