Ingredients

1 - 10 oz. package frozen chopped spinach (thawed and drained)
3/4 cup part skim Mozzarella
3/4 cup fat free Mozzarella
15 oz. light ricotta cheese
1 large egg
1 tsp salt
1 tsp dried oregano
1 dash pepper
1 jar any flavor Prego spaghetti sauce (I have tried others and I think Prego is the best!)
1 package lazagna noodles uncooked
1 cup water
cooking spray
Directions
Preheat oven to 350 degrees. Spray bottom and sides of 13 X 9 inch pan with cooking spray.
I large bowl mix spinach, 1/2 cup of each kind of Mozzarella, ricotta, egg, salt, oregano and pepper. In pan layer: 1/2 cup Prego sauce, one layer of noodles (they do not need to be touching as they expand when they cook), 1/2 of cheese mixture. Repeat. Top with 1/2 cup sauce and remaining Mozarella. Pour up to 1 cup of water around the edges of the pan until it seems a little watery. Cover pan with foil and bake for 1 hour 15 at 350 degress. Let sit for 15 minutes before serving.
I make this for company all the time and it is always a hit. Thanks to my former neighbor the late great Dorothy Shewmon for this recipe.
