Ingredients

    6 large eggs
    1/4 c 1% milk
    2 plum tomatoes, chopped
    1 cup sliced mushrooms
    1 red pepper chopped
    1 green pepper chopped
    1 medium onion chopped
    1 zuchinni chopped
    3 cloves garlic diced
    cooking spray
    spice as desired


Directions

preheat oven to 350 degrees
spray large skillet with cooking spray, add veggies and sautee until tender about 3-5 min, mix eggs and milk in a bowl pour over veggies (sprinkle with salt, pepper and paprika if desred) place in preheated oven for about 20 mn or until eggs are no longer jiggly... enjoy :-)

serves 4 as main course or 8 as side dish

    I really liked this recipe; it is a basic omelet recipe, but you can do so much with it by just adding your own choices of veggies, I added just a teaspoon of cheese, combined with toast, spray butter and a little jelly with applesauce and ff milk, now I am ready for my walk. Thanks - 3/8/10

    Incredible!
    First time making a frittata. Very good meal...I omitted the milk and added diced tomatoes with oregeno and some cheese. Very filling and leftovers will be for breakfast! I also had a toast and milk to complete my meal. - 9/15/11

    Very Good
    i added two eggs to hold it together better, I think my peppers were larger than the recipe called for. I will make this again with the tomatoes on top sprinkled with a bit of chèvre and herbs. - 3/11/11
