Introduction

Kid friendly & small portions curb over eating! Kid friendly & small portions curb over eating!
Number of Servings: 6

Ingredients

    8 oz extra lean ground beef
    1 small egg
    1/2 cup chopped fresh onion
    1/2 cup rolled quick oats (dry)
    4 tbsp ketchup
    2 tsp yellow mustard
    2 tbsp brown sugar barbeque sauce
    1 oz marbled cheddar cheese (cubed into 6 tiny cubes)

Directions

Preheat oven to 375.
In medium mixing bowl, add all ingredients EXCEPT for cheese. Mix well.
Drop beef mixture by spoonfuls into 6 ungreased, unlined muffin tins.
Place 1 small cube of cheese into center of each mini-meatloaf. Press down.
Bake in oven for 30 minutes.
Serves 6.

    Very good! My son loved that he had his own personal meatloaf. I doubled the recipe and will freeze the other 1/2 for a quick dinner. Will definitely make again. - 4/23/10

    This was very good meatloaf! I used ground turkey instead of ground beef. I also baked in a 13x9 Pyrex dish, cut into 12 pieces, used the left overs between whole wheat bread and froze for easy to take lunch sandwich! - 1/31/09

    I used ground buffalo instead and sprinkled mexican cheese in mixture instead of using a cube of cheese. I also added a few other seasonings that made it tasty! The next time, I will spray the muffin pans with pam as the muffins stuck to the pans. - 9/13/10

    Everyone in my family loved this! I used bread crumbs, a smokehouse style bbq that I already had and fresh garlic instead of onions. I also added some of the ketchup & bbq to the tops about halfway through baking. This will definately be making an appearance for dinner again! - 7/29/09
