Ingredients

    12 oz Surimi (imitation crab) coarsely chopped
    2 hard-boiled egg whites, chopped
    2 tbsp raw onion, chopped
    1 dash black pepper
    4 tbsp light mayonnaise
    1/4 cup shredded Swiss cheese
    4 slices tomatoes, medium (1/4" thick)
    4 slices whole-wheat bread

Directions

In a bowl, mix the surimi, chopped egg whites, and chopped onion with the light mayonnaise and dash of black pepper.
Place bread slices on broiler pan.
Top each slice with a tomato slice, then surimi & mayonnaise mixture.
Sprinkle each sandwich with 1 tablespoon Swiss cheese.
Broil unil the tops are golden brown, & serve warm.

    Very Good!! I used thin sliced italian bread and toasted it in the toaster before I piled everything on top and put into the oven. That way I could pick it up and eat it.........YUM - 8/15/09

    I'm not much on seafood so seaching for recipes. I made this one - and it is so so good - of course, I wanted to add salt - but that is a no-no - and soon I will get use to not adding salt on anything. Thanks for sharing this recipe. - 9/23/11

    Roasted 1 pint grape tomatoes (cut in half) with 1 tsp olive oil, minced garlic, balsamic vinegar & thyme @ 350F for 1 hour and added these to the recipe instead of sliced tomatoes. I didn't have swiss cheese so I substituted 1/3 cup grated cheddar/mozzarella mix. Enjoyable, thanks for the idea! - 1/1/14
