Ingredients

    1 lb lean ground beef
    1 10 oz package of frozen spinach
    1 10 oz can of 98% fat free cream of mushroom soup
    1 cup sliced mushrooms
    1/4 cup progresso bread crumbs
    1/2 cup 2% shredded cheddar
    1.5 cups cooked brown rice
    1 tsp garlic powder
    salt and pepper to taste

Directions

makes 6-8 servings.

brown hamburger. rinse and drain off any extra fat.

thaw and rinse spinach. if you don't, your casserole will be very green.

combine spinach, hamburger, rice, 1/4 cup cheese, mushrooms, soup, garlic powder and seasonings to taste.

place in a baking dish and top with breadcrumbs and remaining cheese.

bake at 400 degrees until hot and bubbly.

    Incredible!
    I really struggle with eating veggies, especially anything green, so I'm always looking for a way to sneak them in on myself and my kids. Made this a couple of days ago and the whole family loved it! Had a couple of servings left over & son enjoyed for breakfast! - 1/14/13
