Introduction
Really yummy way to serve pasta. This is the long slow version, read farther down if you want suggestions for doing this in a crock pot or quick make.If you use the fresh mushrooms don't add them till the last 15-20 mins cooking time.
I use chicken thighs her because its what I usually have on hand. You can use chicken breast or a whole small chicken if you like. Just make sure its cut up into smalish pieces. Leave the bones in till you are ready to serve as they add lots of flavour.
To make in a crock pot, brown the chicken in a pan. Use 2 packets of chicken bullion powder or 2 cubes and add only 1/4 cup water to dissolve them in. Put everything in the crock pot and cook on med for 8 hours or high for about 6.
To make this quicker again add less water and use the bouillon cubes or powder. Brown everything a little more and cook over medium heat just until done. Ingredients

6 chicken thighs (or whatever chicken parts you wish to use)
1 medium onion, chopped
1 cup celery, chopped
1 cup red pepper, chopped
4 cloves garlic, minced (or to taste)
2 large cans diced tomatoes
1 can mushrooms (or 2 cups fresh)
2 cups chicken stock (broth)
1/2 tsp dried thyme
1/2 tsp dried basil
1/4 tsp dried oregano
2 bay leaves
salt and pepper to taste.
Directions
Salt and pepper the chicken. In a very large pot over med-high heat brown the chicken in the olive oil. Remove chicken from the pot and add the onions, celery, red pepper and garlic. Saute until onions are just starting to brown. Add back in the chicken and everything else, stir and heat till sauce is simmering. Lower heat and simmer slowly uncovered until sauce is reduced by 1/3 to 1/2 and thickened. This takes 4-6 hours. Serve over pasta with a sprinkle of good Parmesan cheese and a nice side salad for a complete meal.
