Introduction

Can use chicken broth if you don't need vegetarian. Can use chicken broth if you don't need vegetarian.
Number of Servings: 8

Ingredients

    8 cups black beans, cooked
    3 cups Vegetable or Chicken Broth
    2 pieces of Kombu
    5 celery stalks, chopped
    1/2 lg onion, chopped
    1 cup salsa
    2 TBSP Chili Powder (to taste)
    1 TBSP Cumin
    6 Cloves Garlic, minced

Directions

Soak black beans or drain if in cans, add to pot. Add vegetable broth and kombu, simmer for an hour or so. Saute celery, garlic, and onion in a skillet with a bit of oil until they are soft. Add veggies, salsa and spices to the broth and beans. Simmer for another hour, then pull out any big pieces of kombu that you see. Use immersion blender or pull out 1/4 of the beans to puree in regular blender. Leave some beans not pureed unless you want the soup to be smooth. Top with your favorite goodies and eat!
