Ingredients

    * Butter, unsalted, 2/3 cup
    * Onions, raw, 1 medium (2-1/2" dia)
    * Leeks, 1 leek
    * Carrots, raw, 6 medium peeled
    * Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
    * Garlic, 2 TBSP Minced
    * Salt, 1 tsp
    * Chicken Broth, 1 Quart
    * Pepper, black, 1 tsp
    *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.) cut into cubes
    *Baked Ham Bone In, 2 lb.
    *Flour, white, 2/3 cup
    * Milk, 1%, 6 cup
    * Heavy Whipping Cream, 2 cups

Directions

-Sweat all vegetables (except potatoes) and garlic in butter until semi-soft.

-Add spices, chicken broth, milk and ham bone (with some meat on it- not a full ham, just about 2 lbs. of the leftovers from a ham) to the pot, cook approx. 1 hour until ham begins to fall off the bone.

-Add potatoes and cook 30 minutes more.

-Remove ham bone and meat from pot and cut up if necessary into bite sized pieces.

-Add flour (mixed with 1/4-1/2 cup water to form a slurry) and cream to the pot and cook until thickened.

-Add ham back to the pot, mix and serve hot.

Can be served alone or with cheese, bacon, sour cream, chives, etc. (not included in the calorie count).
