Ingredients

2 cups nonfat yogurt (Greek style, preferably)
4 egg whites
1 egg yolk
1/4 tsp lemon
1 tbsp vanilla
3 tbsp whole wheat flour**
8 packets Stevia
**Pamela's baking mix is a great substitute if you are sensitive to wheat.
Directions
**Bake cheese cake for 10 min @ 450F reduce to 300F bake 35 minutes more.** Once cooled refrigerate for at least 3 hours prior to cutting.
Butter a 9 inch springform pan.
In a large mixing bowl, whisk together yogurt, egg yolk, flour and vanilla extract.
In a medium mixing bowl, beat egg whites and lemon until foamy. Gradually stream in Stevia and continue beating on medium-high speed until egg whites have reached soft peaks. Gently fold egg whites into yolk mixture. Make sure all egg whites have been fully incorporated. Pour into prepared pan and bake.
Top with fruit of your choice. Nutritional information does not include fruit topping.
