Introduction
I am a coffee fiend in the morning - it's gotta be organic fair trade french roast, carefully brewed in my Melitta one cup filter! But since I am now trying to avoid cow's milk & soy, and have long sworn off corn syrup and hydrogenated oils, my beloved SF hazelnut creamer is a thing of the past. Sigh. I have started trying to recreate it with ingredients I can eat, and this is my first attempt. Please do comment if you make this - I will be very interested in your feedback! Ingredients
-
1 cup Meyenberg Evaporated Goat Milk (24 carbs) - could use canned coconut milk if you want it vegan or dislike goaty taste - that would also reduce the carbs.
1/4 cup spectrum unrefined organic coconut oil - I found this to be a bit strong in the coconut taste department, try using refined coconut oil, or coconut cream if you can find it.
1/3 cup water
1 1/2 cups almond breeze unsweetened vanilla or unsweetened plain
1 packet Knox unflavored gelatin
2 tsp. Frontier organic vanilla extract - if not this brand, look for one that has no sugar or corn syrup
1/2 tsp. frontier butterscotch flavor, alcohol free (this is strong, don't use more!)
3/4 cup Torani SF Hazelnut Syrup (or DaVinci) - use DaVinci if you avoid acefulsame potassium, because the new formulation of Torani is not just splenda.
2 T Smoky Mountain No Calorie Sweetener (or any liquid saccharin, I like this brand because it pours easily)
You could use another liquid 0 carb sweetener but I like the mix of saccharin & splenda - I think they cancel each other out a bit. I have never used liquid stevia as I don't like the taste of stevia straight, but I know many people use it blended with good results - perhaps with erithritol.
