Introduction

Ingredients

    1.5 lbs. boneless, skinless chicken breasts, diced
    2 cups low-sodium chicken broth
    2 tbsp. olive oil
    1 yellow onion, diced
    2 cloves garlic, minced
    1/2 lb. sliced mushrooms
    2 small cans Campbell's Healthy Request Cream of Mushroom soup (or Cream of Chicken)
    3 oz. Neufchatel (low fat) cream cheese
    4 tbsp. fresh, snipped chives (or 2 tbsp. dried)
    1/4 cup fresh parsley, chopped (or 2 tbsp. dried)

Directions

In large saucepan, heat broth to boiling and add diced chicken. Simmer for about 20 minutes until chicken is cooked through. Meanwhile, in large, non-stick skillet, heat olive oil and add onions, garlic and mushrooms. Saute until onions are transparent. Pour in chicken with broth; add soup, chives, mushrooms and Neufchatel cream cheese and stir well until cheese is melted and all ingredients are well blended and hot. Serve over rice, noodles or baked potatoes. Makes about 6 servings.
