This recipe came out of the Columbus Dispatch (Ohio); I have adapted it to bring down the calories. It takes a long time to cook in the oven, but your house will smell like heaven and everyone will be quite impressed because this one is really tasty! Ingredients

1.25 lbs. boneless pork chops (1/2" thick - 5 chops)
    Dried or fresh rosemary
    Kosher salt
    Fresh ground pepper
    3 Tbsp. olive oil
2 large, sweet Vidalia onions, sliced
    2 tsp. fennel seeds
    3 Tbsp. flour
    3 cups chicken broth
    1 cup dry white wine
    3 medium garlic cloves, smashed
1 can (14 oz) cannellini beans, rinsed well & drained

Directions

Preheat oven to 350. Sprinkle pork chops on both sides with rosemary, kosher salt & pepper. Heat 2 Tbsp. olive oil in large, oven-proof skillet. Add chops and brown well, about 5 minutes/side. Transfer to plate. Add remaining olive oil with Vidalia onions & fennel seeds. Saute, stirring until lightly browned (about 4-5 minutes). Sprinkle with flour and cook, stirring, about 2 minutes. Return chops with any accumulated juices, along with broth, wine and garlic. Bring mixture to a simmer, lower the heat and cover. Simmer about 10 minutes, then place skillet in oven and cook until meat is fork-tender, about 1 hour or longer. Stir in beans and cook, uncovered, another 15 minutes. Remove chops and return skillet to stove top. Cook sauce to reduce and thicken, about 15 minutes. Very good with mashed sweet potatoes, regular mashed potatoes and green beans. Serves 5.
