This a little richer tasting the basic lentil soup. Tarka (browned onions and spices) really perk up the flavor (and the HEAT) in this delicious, nutritious and very filling soup.

This a little richer tasting the basic lentil soup. Tarka (browned onions and spices) really perk up the flavor (and the HEAT) in this delicious, nutritious and very filling soup.

Number of Servings: 4

Ingredients

    1 cup uncooked lentils (yields 2 1/2 cups cooked
    pinch of tumeric
    3/4 tsp salt (can adjust to taste afterwards)
    water to cook lentils (approx. 6-8 cups)

    For Tarka:
    3 tbsp oil (ghee, olive, vegetable, or sesame)
    1 or 2 medium onion
    1 tsp cumin seeds
    3 or 4 green chiles, slit lengthwise
    1 tsp minced garlic
    1 tsp minced ginger
    1 tsp garam masala (available in asian section of grocery)
    handfull cilantro - chopped (optional)

Directions

Place dahl, water and pinch of tumeric in slow cooker. Cook on high until soft. (6-8 hrs) Add TARKA just before serving.

To make TARKA:

Heat olive oil and add cumin seeds. Once seeds begin to pop, add onion and cook until very brown, and slightly nutty tasting. Add spices and stir well. Add to soup mixture.

Garnish with fresh coriander (cilantro), if desired. Serve with fresh Naan bread.
