Ingredients

* 5 large [60g] 100% Whole Wheat Tortillas (wrap)
* 1/2 tbsp. Olive Oil
* Salt and Pepper to taste (NOT included in tracker!)
* 85g (1/2 medium) Red Onion, Sliced / Chopped
* 130g (1 cup) Corn Kernels, frozen
* 1/3 cup Thick & Chunky Salsa, medium
* 1 can Heinz Chili Style Pinto & Red Kidney Beans (398ml)
Directions
1. In a medium-sized skillet, heat the olive oil over medium-high heat and add salt and pepper to taste.
2. Add the onion to the pan, brown and carmelize a bit, and then add the frozen corn kernels. Cook for a few minutes more.
3. Add the beans and salsa, lower the heat to medium, and simmer until heated through.
4. Serve 1/2 cup of the bean mixture (whole recipe makes 2 1/2 cups, +/-) on each tortilla and wrap up! Enjoy. :)
SERVES FIVE.
*NOTE: Store the bean mixture in the fridge separated from the tortillas for a quick multi-day meal idea. Scoop out some of the beans, add to the tortilla, and microwave to heat! :)
You could easily add cheese or sour cream (no longer vegan!!!) to the tortilla for flavour, but remember - I was po' and hadn't been to the sto' - I didn't have that mess at the time! ;-)
