Introduction

Number of Servings: 6

Ingredients

    8 8oz cups water ( more if necessary)
    Lentils, 454 grams ( small bag)
    Stewed Tomatoes, 1 cup low sodium
    Onions, raw, 1/2 cup, chopped
    Thyme, ground, 2 tbsp
    Garlic, 2 cloves
    Salt, 2 tbsp
    Green Beans Italian Flatbeans1 can (drained)
    Canadian Bacon, 2 slices , Diced
    Macaroni, whole-wheat, 1 cup elbow shaped (cooked and drained)
    Parmesan Cheese, grated, 4 tbsp

Directions

Combine all ingredience ( except cheese and pasta)
into a medium sized pot and allow to simmer for 35 minutes or until lentils become soft and split.

Remove heat and add your pre-cooked pasta and 2 tablespoons of grated cheese and stir until well blended.

Soup should be slightly thick but not like a bean or pea soup. If you need more water to thin out, just add it.

When serving sprinkle 1/2 tsp of grated cheese on top of each bowl for presentation.

Can be eaten as a soup or main dish.

Ham can be deleted to make it vegetarian friendly

A nice piece of multi grain Italian bread sprinkled with a bit of olive oil instead of butter would make a great additive to round out this as a meal.Dont forget to add the calories for this addition.

    Incredible!
    This was a big hit at my house tonight! Thanks so much for posting this recipe. I used turkey ham and sauted that with the onion & garlic before adding all the ingredients. And in place of some of the water I used spaghetti sauce I needed to use up. Very delicious. 10 thumbs up from our family! - 10/2/07

    Very Good
    The garlic really makes this soup! I substituted the canadian bacon with turkey bacon- because it was what I had on hand... but still a great recipe. It made ALOT! - 8/27/07
