Introduction

A low sugar, high fiber chocolate cake that is supposedly for breakfast... but I'm making it for desserts!


Thanks to LRUSSELLFAMILY for the original recipe -- I swapped out 1 cup of the sugar for splenda and the oat bran for wheat since that's what I had on hand!

Ingredients

    1 cup Splenda
    1/2 cup sugar
    3/4 cup cocoa powder
    3/4 cup whole wheat flour
    2/3 cup wheat bran
    1/3 cup flax seed meal
    1-1/2 tsp. baking powder
    1-1/2 tsp. baking soda
    1 tsp. salt

    1 1/3 cups buttermilk
    2 eggs
    2 tbsp. canola oil
    1 tsp vanilla
    1 cup boiling water

Directions

Preheat oven to 350. Spray 9"x13" baking pan with non-stick spray. In a large bowl combine dry ingredients. In another bowl, whisk together buttermilk, eggs, oil and vanilla. Stir into dry ingredients until mixed. Add boiling water and stir until combined. Pour into prepared pan and bake for about 35 minutes. Makes 12 servings.
