Ingredients

    1/3 low sodium soy sauce
    2 tbl mirin
    2.5 tbl cider vinegar
    2 tbl sugar
    1.5 tbl chopped peeled fresh ginger

Directions

Combine all ingredients in a small sauce pan. Simmer and stir until sugar is disolved and sauce is reduced to about a half cup. Cool to room temperature before marinating raw meat/fish.
