Introduction
Work in progress, this should be super tasty but I'm still bashing out the exact ingredient amounts. You might end up needing more crust, if so, double the recipe. No added oils or sugars, just fruit, nuts and cocoa. YUM. Ingredients
-
For the Crust:
6 Raw unsoaked almonds
2-3 Bahri dates or 1 Medjool
(no need to soak Bahris, if you use a Medjool, soak it)
Pinch of sea salt
For Filling:
Half a 6-7˝ banana, frozen
1 tsp GOOD quality unsweetened cocoa (I like Equal Exchange or Lake Champlain - the darker and richer, the better! Cocoa is one place to get the good stuff!)
1/2 tsp vanilla and chocolate extract (can sub almond/orange/mint for chocolate or just use more vanilla)
Dash cinnamon and nutmeg
Directions
Grind the nuts in your food processor/Ninja/blender/etc. until they are finely chopped. Add dates and salt and process until there are no large chunks of date left. It's right when it looks like crumbs.
Press crust into your little pie tin (I've got cute mini hearts, perfect for single serving stuff like this). Place in the freezer for about 15 minutes to firm up.
Wait to process the filling until the crust is nearly done as you want your bananas to melt as little a possible.
Put the chunks of frozen banana, cocoa, extracts and spices into the processor. Whirl until smooth and creamy. Add a splash of non-dairy milk, if needed. You want it thick and creamy and ice cream like, not runny.
Pour chocolate banana mix into prepared crust. Serve immediately or put into freezer until ready to eat. YUM.
