Number of Servings: 6

Ingredients

    12 oz eye of round steak/roast, cubed
    1/4 c jiffy corn muffin mix (dry)
    2 Tbsp Dried Parsley
    2 tsp Italian Seasoning (Dry herbs)
    1 tsp ground black pepper
    10 oz Green Giant fresh Baby Carrots
    1 small head cabbage, cubed
    2 medium turnips, cubed
    3/4 large white onion, cubed/chopped
    2-1/2 c Low Sodium V8 juice
    1 Tbsp garlic, minced
    1 can Swansons 33% less sodium chicken broth
    1 cup water

Directions

Cut meat and veggies bite-size to your preference.
Put everything in slow-cooker/crock-pot.
Cook on low 6 - 8 hours.

Serving Size = 2-1/2

    Very Good
    I left out the flour/olive oil meat browning and just put everything into the crock pot. I used 1/2 V8 and 1/2 Tomato which raised the sodium, but with no other added salt. I also added some Cajun spice to give it more zing. - 5/7/08

    Wow! This was really great! I'm not sure how big your slow cooker is but I have a 3-qt. and had to cut back on the veges and liquid a bit so it would all fit. I also added some leftover chopped green onions and cut back on the garlic. Turned out delicious. Thanks for sharing - 2/19/08

    This has a little too much garlic for my taste and needs some salt. But the V-8 makes a nice thick stew. I would make this again, but would probably add more seasoning. - 2/4/08
