Introduction
Homemade Granola. Is there anything better? I make mine with organic oats and cranberries. Could take it even further by using organic brown sugar too, but I didn't go that far. :-) Delicious served with milk for breakfast but I love it with yogurt for lunch. Homemade Granola. Ingredients:
Instant, Quick, and Regular Oats Cereal, 4 cup, dry, yields
Cranberries (dried) "Fruit D'Or" brand 40g serving, 120 gram(s)
Brown Sugar, .5 cup, packed
Honey, 2 tbsp
Canola Oil, 2 tbsp
1 tsp maple extract
dash of salt
3 tbsp water
Directions
Makes 12 servings, about 55 grams each.
Mix honey, water, brown sugar and canola oil in a saucepan. Cook over medium heat until sugar is completely dissolved. Remove from heat and add maple extract and salt. Stir.
Stir above mixture into the oats until coated completely. Spread in a thin layer on pan and put in 300 degree oven. Stir every 10 minutes or so for a total of about 30-40 minutes (until oats have started to crisp up). Transfer to bowl to cool and add dried cranberries. Store in cool dry place (I keep mine in the fridge) after portioning out into 12 equal servings which is about 55 grams.
