Introduction

Ingredients

    1/2 c unsalted butter, softened
    3/4 c Splenda Granular
    1 tsp almond extract
    1 TBS vanilla extract
    3/4 c flour combined with
    1/4 tsp salt & 1tsp baking soda
    1 cup oatmeal

Directions

Preheat oven to 350F. Line cookies sheets with parchment or foil.
Cream butter and Splenda in mixing bowl until light and airy. Mix in extracts. Stir in flour, salt and baking soda. Add oatmeal and blend until combined.
Drop dough by heaping teaspoons onto prepared cookie sheets 2 inches apart. Bake on middle rack 18-20 minutes until browned. Cool on cookie sheet 2-3 minutes. Transfer to wire rack and cool completely. Store tightly covered.
Makes 36-3 inch cookies. Serving size/nutritional info is for 2 cookies.

    These are the best oatmeal cookies I've ever made! Used half the amount of Splenda and it was just right. Make sure to use COOKED oatmeal. - 2/5/09
