Shredded Chicken
Shallots
Butter
Milk
Cheddar Cheese
Fontina Cheese
Parmesan Cheese

Directions
Preheat oven to 375 degrees.
Cook spinach and drain excess water. Cook shallots in olive oil until soft, add sliced mushrooms and cook till soft. Add shredded chicken (poach in chicken stock or water ahead of time) and put aside to cool. Whisk together milk, eggs, softened butter, biscuit, and all cheese. Stir in veggies. Pour into a lightly greased 10" quiche pan or a 9" by 11" pan (quiche will be thin). Cook about 45 minutes until golden brown on top.
